Pancake Day recipes

It is that time of year again, Pancake Day! It is time to dive into your cupboards, pull out your staples and get flipping your pancakes. From traditional crepes, to healthy protein pancakes, we have a recipe for everyone. Keep on reading to discover how to make the perfect pancake every time.


Traditional Crepes

Ingredients

  • 140g Plain Flour 
  • 2 Eggs
  • 360ml Milk

 

Step 1

Place your flour, eggs and milk into a mixing bowl or jug. Mix with a whisk until you create a smooth batter, ensuring there are no lumps.

Step 2 

Set your mixture to one side to rest for approximately 30 minutes, this ensures that the gluten can relax after mixing with the wet ingredients. Please note: This step isn’t essential however we recommend for pancakes that melt in your mouth! 

Step 3

Once your mixture is well rested, simply heat some oil in your pan - we recommend using a frying pan or a specific crepe pan. Ensure that your oil is well heated before pouring your mixture into the pan. Cook your pancake for around 1 minute on each side…don’t forget to try and get the best pancake flip!

Step 4

Serve with your favourite topping of your choice, we love fresh fruit or golden syrup!


American Pancakes

Ingredients 

  • 135g Plain Flour 
  • 2tsp Baking Powder
  • 350ml Milk
  • 2 tsp Sugar
  • 2 Eggs


Step 1

In a jug, whisk the eggs and milk together and set aside for later. 

Step 2

Mix your flour, baking powder and sugar together in a large bowl. Once combined, create a well in the middle to prepare for your wet ingredients. 

Step 3

Pour your milk and egg mixture into the well and whisk together. We recommend using an electric whisk to ensure an extra fluffy pancake however a balloon whisk and some muscle power works great too!

Step 4 

Heat a small amount of oil into a frying pan. Once the oil is hot, pour a small heap into the pan. Cook the pancakes on one side for around 1-2 minutes or until small bubbles begin to form on the top of your pancakes. Once the bubbles form, flip the pancakes over and cook for a further minute. 

Top Tip: To make your pancakes extra fancy, try adding some chocolate chips or blueberries into your mixture before cooking! 

Step 5

Serve with your favourite toppings, we love to add streaky bacon and maple syrup to ours!


Fluffy Protein Pancakes

Ingredients 

  • 1 Scoop of protein powder (We recommend vanilla or unflavoured) 
  • 1 Banana 
  • 75g Oats 
  • 2 tbsp Milk 
  • 1 tbsp Baking Powder
  • 3 Eggs


Step 1 

In a blender, mix the baking powder, oats and protein powder together to form a flour like texture, 

Step 2 

Whisk your eggs until light and fluffy. After this, combine your egg mixture, banana and milk into the blender. Make sure that you keep your dry ingredients inside of the blender whilst mixing.

Step 3

Blend your ingredients together for around 1 minute to ensure the mixture is extra fluffy. If any lumps form, blend for an additional minute.

Step 4

Heat roughly a tablespoon of oil into a frying pan and pour a small amount of mixture into the hot pan (roughly 8cm wide). Cook for around 1-2 minutes before flipping and cooking for a further 1 minute. 

Step 5

Serve your pancake stack with a topping of your choice such as chocolate syrup, jam or chopped fruit.
